Trinidadian Shrimp Wontons with Trini Wonton Sauce

This is my favourite snack. I usually eat them a dozen at a time. This is a classic Trini shrimp wonton recipe with my version of a Trini Wonton Sauce!

INGREDIENTS

  • 2 medium Shrimp (24g) (cleaned and without shells)
  • 1 TSP (5ml) Trinidadian Green Seasoning
  • 6 Wonton Wrappers
  • 3 TBSP (45ml) water (for wrapping wontons)
  • Deep-Fryer filled with Canola oil OR a 5-quart sauce pan half-filled with Canola oil (approx. 2.5 litres)
  • 1/8 TSP or a pinch of Kosher salt (salt to taste)
  • 1/16 TSP or a pinch of black pepper (black pepper to taste)
  • (3 TBSP or 45g) Ketchup
  • (1/2 TSP or 3g) Mustard
  • (1/2 TBSP or 7.5ml) Pepper Sauce
  • (1/2 TBSP or 7.5ml) Dark Soy Sauce
  • (1 TSP or 5g) Sugar
  • 1/4 Lime (1 TSP or 5ml) Lime
  • 1/2 TSP chopped Green Onions (for garnish)
  • approx. 8.5 x 11 inches wax paper (for placing wrapped wontons before frying)
  • Aprox. 4 Paper towels of 8.5 x 11 inches (for placing wontons after frying)

DIRECTIONS

  1. Add Green Seasoning to Shrimp and mix.
  2. Blend shrimp and Green Seasoning into a paste (about 15 seconds).
  3. Place 1/2 TSP (3g) blended Shrimp mixture into the middle of each wonton wrapper.
  4. Use water to moisten the edges of the wonton wrapper and then fold into half and then join two of the 2 points (as shown in the video).
  5. Place wrapped wontons on wax paper.
  6. Heat oil to 375 degrees F.
  7. Place wontons into the deep-fryer or frying pot and cook for approx. 30sec to 1min until golden brown.
  8. Remove wontons from fryer and place on paper towels to drain off excess oil.
  9. For Trini Wonton sauce: Mix ketchup, mustard, pepper, soy sauce, sugar, salt, black pepper and lime together.
  10. Serve wontons immediately after frying with the Wonton Sauce and garnished with Green onions.
