
Authentic Trinidadian Sorrel Drink
Sorrel! Trini Christmas in a glass! A classic Trinidadian Christmas drink made with the flowers of the Sorrel tree. This simple recipe uses dried sorrel petals and orange extract. Alternatively, dried orange peel instead of orange extract or fresh sorrel petals instead of dried petals can be used.

This recipe is scalable. To make larger quantities, simply double or triple the quantities of ingredients as required.

INGREDIENTS
- (10 TBSP OR 25g) Dried Sorrel petals
- (6 TBSP OR 90g) White Sugar
- (5 CUPS OR 1.2L) Water
- (1/8 TSP OR 0.63ml) Angostura Bitters
- (1/16 TSP OR 0.33ml) Orange Extract
- (3 cloves OR 1/2 TSP OR 1g) Whole Cloves
- (1 TSP OR 2g) Cinnamon Stick
- (1/2 TSP OR 1g) Star Anise
- (1/2 TBSP OR 10g) Fresh peeled Ginger
DIRECTIONS
- Add water, sugar, ginger, clove, star anise, cinnamon stick and sorrel to a saucepan.
- Stir for 5 seconds to combine ingredients.
- Bring to a boil and then lower heat to allow mixture to simmer for 10 minutes.
- Let steep for 5 minutes.
- Strain mixture and then let cool (approximately 3 hours.)
- Stir in orange extract and bitters and mix for 5 seconds.
- Pour into glass bottle and store in the refrigerator.
- Serve chilled.
